Sauternes is one of the few wine regions in the world where noble rots happen. It’s thanks to its microclimate with the confluence of cold waters from Ciron river and those, warmer, of Garonne river. Noble rot is a fungus that causes grapes to lose nearly all of their water content. With the absence of water, the sugar becomes more concentrated; it’s why Botrytis grapes produce sweet wines. The Sauternes wine region comprises five communes: Barsac, Sauternes, Bommes, Fargues and Preignac
