The two methods of producing sparkling wines'Crémant' (Crémant' article here) is the term used in other parts of France for sparkling wines produced in the classic Champagne method. The ancestral method is very similar to the way you craft ciders and ale. They usually have fewer bubbles than a Champagne. Those sparkling wines have a stronger grape flavor and a creamy texture.
